USO ALIMENTARE...| L’uso culinario di Lentinula edodes (shiitake) è ampio e tradizionale, soprattutto nelle cucine dell’Asia orientale, dove è considerato un alimento aromatico e funzionale.
I cappelli freschi o secchi vengono impiegati in zuppe, brodi e minestre per arricchire il sapore umami. I funghi secchi, una volta reidratati, rilasciano un liquido aromatico che viene spesso utilizzato come base di cottura.
In padella o al wok, lo shiitake viene saltato con verdure, riso o noodles, mantenendo una consistenza carnosa e un aroma intenso. È adatto anche a cotture lente in stufati e brasati vegetali o di carne.
Nella cucina giapponese e cinese è usato come ingrediente di ripieni per ravioli, involtini e polpette, oppure affettato finemente in frittate e piatti a base di uova.
La polvere di shiitake essiccato è utilizzata come condimento naturale per insaporire salse, brodi vegetali, piatti di legumi e cereali, sfruttando il suo gusto umami senza aggiunta di sale.

Dal punto di vista nutrizionale, lo shiitake è apprezzato non solo per il sapore ma anche come alimento funzionale, integrato nella dieta quotidiana per supportare il benessere generale e la vitalità, secondo una tradizione culinaria millenaria. |

NOTE VARIE E STORICHE...Nel 1960, epidemiologi giapponesi valutarono l'incidenza delle diverse patologie nel loro paese. In uno studio trovarono due distretti isolati di montagna nei quali le malattie degenerative erano quasi sconosciute. Il governo inviò quindi un gruppo di ricercatori in quelle zone per individuare il motivo della ridotta incidenza rispetto al resto della popolazione. Riguardava la genetica? Le abitudini alimentari? Scoprirono così che l'industria principale in entrambe quelle zone era la coltivazione dello Shiitake e che gli abitanti lo utilizzavano per la loro alimentazione quotidiana.

Secondo la pratica macrobiotica la bevanda di Shiitake aiuta ad eliminare il cosiddetto "sale vecchio", è quindi particolarmente indicata per coloro che hanno assunto troppi cibi salati e che soffrono di ipertensione dovuta a una condizione eccessivamente yang. Serve anche ad eliminare il colesterolo dal sangue, a stimolare la funzionalità renale, a curare tossi croniche ed a distendere una condizione di stress e tensione eccessiva.
